The Chiriuchu is an emblematic dish of the feast of Corpus Christi, this pottage dates from the time of the Incas and the colony, Chiriuchu meaning Chiri = cold and uchu = chili pepper.
This plate has the ingredients as boiled chicken, baked cuy, charqui or chalona, accompanied with delicious tortillas or flour fritters, roasted corn, cheese, sausage, seaweed (algae), chorizo and egg cups fish or “cau cau” and for those who like spicy, infaltable hot pepper is present.

The “Chiriuchu” traditional dish of the Feast of Corpus Christi, will expand in 290 stands that will be located on the perimeter of the San Francisco Square. The gastronomic festival will be held on May 25-26 and June 2.
